I've found good Filipino cookbooks very hard to come by and I was pleasantly surprised by this book. The recipes are accurate and meticulously written and the results are exactly the tastes I was used to when growing up in the Philippines. If I could have just one Filipino cookbook in my house, this would be it!
The Philippine Cookbook, by Reynaldo Alejandro captures the essence of Philippine cuisine. The recipes are well-organized and easy to follow. As a self-proclaimed connosieur of Filipino foods, I highly recommend this book if you're searching for an authentic taste of the Philippines.
Filipino Cuisine: Recipies from the Islands As a first generation Filipino, I have collected several cookbooks on Filipino cuisine and this by far is the best, in the format, recipes and background info on origination and regional histories. Very thorough, informative. I highly recommend it!

That is, they are based on the traditional foods of the Philippines but modified to allow the chef to take advantage of fresh local products, and of a minimum of specialty spices. The resulting foods are thus more suited to both the American taste and the American supermarket than highly traditional recipies.
